Chili Lime French Fries with Cotija Cheese

Chili and lime is a classic Mexican combination that works. You get the spicy kick from the tajin and the fresh tang from the lime zest and juice with a touch of saltiness from the sea salt and the mild and crumbly cotija cheese. The flavors are bright and addicting. 

Tajin (salsa en polvo) is a popular Mexican blend of chili peppers, lime and salt. I recently purchased some at Costco.

Ingredients:

1 to 11/2 extra large russet potato
1/2 to 1 tbs of tajin or salsa en polvo (if you can’t find this you can substitute with a little cayenne pepper and paprika)
pinch couple of sea salt
zest of 1/2 a lime
juice of 1/2 a lime
1/2 to 1 tbs of crumbled cotija cheese
season to taste

Directions:

Ingredients are just guidelines – season to your taste.

1. Julienne Russet potatoes into 3/8 inch by 3/8 inch strips for the French fries. I like to use a mandoline to make julienning fries a cinch!
2. Soak fries in water for a minimum of 30 minutes or up to 24 hours.
3. Turn on your deep fryer or use a large heavy pot and thermometer and heat your oil to 350º.
4. Drain and pat dry your fries well.
5. Place the French fries in the oil and cook for approximately 4 to 5 mins to partially cook them.
6. Take the fries out and spread them out on a baking sheet lined with parchment paper to cool for at least 2 minutes but no more than 90 minutes.
7. Turn your fryer up to 375º and let the oil heat up.
8. Place the par-cooked fries back into the oil and cook for approximately 2-3 mins until they become a golden brown.
9. Shake off the excess oil and place the fries in a mixing bowl to toss with the desired seasonings. Serve and enjoy immediately.
