Coconut Fried Ice Cream Recipe


This sweet treat is a play on textures with a crunchy, deep fried shell. Served with†cajeta†and Mexican chocolate, it's the perfect summer dessert.†


Prep Time: 10 min + overnight
Cook Time: 10 seconds

Ingredients:

1 scoop toasted coconut ice cream
1 beaten egg
1 cup frosted flakes , cereal
*Mexican chocolate sauce
Cajeta (caramel sauce), or , , for topping

Directions:

Step 1 - With ice cream scoop, roll ice cream in balls, then in beaten eggs until fully coated.
Step 2 - Roll in crushed up cereal and pack in to build coating. Return breaded ice cream to freezer and let set overnight.
Step 3 - When ready to serve, dip in oil heated to 350 degrees for 8-10 seconds. Top with cajeta (caramel sauce) and Mexican chocolate sauce.
