Green Beans with Garlic, Prosciutto and Olives

An exceptional twist on green beans.

Ingredients:
| 1/2 ounce | prosciutto or bacon, finely chopped |
| 2 cloves | garlic, minced |
| 1 tablespoon | olive oil |
| 1 pound | green beans, ends trimmed |
| 1 1/2 tsps | fresh rosemary, chopped |
| 3/4 | ripe pitted olives, cut in half longways |
| freshly ground black pepper, to taste | |
| sea salt, to taste |
Directions:
Add prosciutto and garlic to hot oil in frying pan. Cook, stirring, just until prosciutto is crisp, (do not scorch), about 2 minutes. Quickly remove prosciutto and garlic from pan with slotted spoon and set aside. Add beans, 1/3 cup of water, and rosemary to pan. Cover and cook until beans are just tender to bite, about 5 minutes. Gently mix in olives. Cook, uncovered, stirring occasionally, until most of the liquid has evaporated, 3 to 4 minutes. Transfer bean mixture to a serving bowl and sprinkle with prosciutto and garlic. Garnish with pepper to add to taste.
