I have spent the last 2 hours reading your newsletter and wonderful recipes. I have already printed a whole bunch I want to try. I love them because they are using ingredients one has on hand. Strawberries and Cream Mousse

Serves: 5


        

  Download this recipe.
4 cups strawberries
1/2 cup sugar
1 cup whipped cream
1 cup sour cream
1/2 cup water
2 3-ounce packages strawberry jelly
1 teaspoon vanilla extract
1 teaspoon liquid strawberry flavor (optional)
Additional whipped cream, whipped


Reserve a few strawberries for garnish. Halve remaining berries and place in a large bowl. Stir in sugar; set aside. In a small mixer bowl at medium speed, beat 1 cup whipping cream until stiff peaks form. Fold in sour cream until blended; set aside.

In a small saucepan, pour water over gelatin. Stir over medium heat until gelatin is dissolved. Place in a blender container. Add strawberry mixture. Cover and blend at low speed 10 seconds or until smooth. Add vanilla and strawberry flavor. Cover and blend. Return mixture to large bowl. Whisk in whipped cream mixture until no white streaks remain. Spoon into a 2 1/2 -quart serving bowl. Chill at least 3 hours or until set.

Just before serving, garnish with whipped cream and reserved strawberries.
