I have spent the last 2 hours reading your newsletter and wonderful recipes. I have already printed a whole bunch I want to try. I love them because they are using ingredients one has on hand. Lemon Squares

1 cup flour
1/2 cup butter soft or margarine
1/4 cup powdered sugar
1 cup sugar
2 eggs
2 tablespoons flour
1 tablespoon lemon peels grated
2 tablespoons lemon juice
1/2 teaspoon baking powder
1/4 teaspoon salt


Blend 1 cup flour, butter or margarine, and confectioners' sugar thoroughly. Press evenly in an 8 x 8 x 2-inch baking pan. Bake at 350° for 15 to 20 minutes or until lightly browned. Beat remaining ingredients together until light and fluffy. Pour over hot crust; bake an additional 25 to 30 minutes or until no imprint remains when lightly touched. Cool; frost with Lemon Glaze. Cut in squares.

Lemon Glaze: Combine 1 cup confectioners' sugar, 1 tablespoon of butter or margarine and 1 tablespoon lemon juice; blend until smooth and of spreading consistency. Add a few more drops lemon juice, if necessary. Makes 1/3 cup.
