I have spent the last 2 hours reading your newsletter and wonderful recipes. I have already printed a whole bunch I want to try. I love them because they are using ingredients one has on hand. Asparagus Foldovers

Serves: 15

1/2 cup mayonnaise real
1/4 cup sour cream
2 tablespoons lemon juice fresh
15 slices bread
1 8-ounce package frozen asparagus spears cooked and drained
Real butter, softened
1/4 cup parmesan cheese Grated


1. Preheat oven to 400° F. In a small bowl mix mayonnaise, sour cream and lemon juice.

2. Trim crusts from bread; flatten with a rolling pin. Spread bread with mayonnaise mixture. Place an asparagus spear diagonally on each slice of bread; fold over and secure with a wooden pick. Spread butter on top surface of bread. Sprinkle with cheese and place on baking sheets. Bake for 12 to 15 minutes or until lightly browned.
