I have spent the last 2 hours reading your newsletter and wonderful recipes. I have already printed a whole bunch I want to try. I love them because they are using ingredients one has on hand. Funny Bunny Salad

Serves: 6

6 cups lettuce rinsed and drained
1 16-ounce container cottage cheese
2 16-ounce cans pears halves, drained
3 slices american cheese
6 green olives pimiento-stuffed, cut in half
1/2 ounce red maraschino cherries cut in half (3 cherries)


1. For each salad, place a lettuce leaf on a salad plate. Place a medium scoop of cottage cheese on the lettuce for the bunny's head. Place one pear half, cut-side down, below or under the head for the body.

2. Cut a second pear half into 2 long pieces. Place them above the cottage cheese to make ears. Cut a cheese slice into 6 narrow strips. Place 3 strips on each side of the head to make whiskers. Add olive halves for the eyes and a cherry half for the mouth. Add a small spoonful of cottage cheese next to the body for a tail. Put in the refrigerator until serving time.

(Start about 1 hour before serving.)
