My Version of Death by Chocolate

Base of Cake
1 box of chewy brownie mix (with or w/out nuts)

Truffle Middle
2 1/2 sticks of butter
2TBPS of instant coffee
1/3 cup water
1 package gelatin
1 bag semisweet chocolate chips
3/4 sugar
3 TBPS vanilla

Mousse Top
2 cups of heavy whipping cream   Pirouette cookies (Pepperidge farm)

Mix brownie mix as cake directions..Pour into a springform pan..bake according to box directions..When done let cool..In medium size sauce pan,add 1/3 c water and 1 package gelatin let dissolve..Once dissolved add butter and coffee powder,and sugar DO NOT BOIL but do cook till slightly thicken..In food processor add chocolate chips,once Truffle mix is thicken slowly add the truffle blend till smooth...Reserve 1/3 cup for mousse topping..Pour over the brownie

With mixer whip whipping cream till soft peaks slowly add COOLED reserved truffle mix then pour over the truffle layer...ADD the cookies around then you can do a creative design (I like to do the spider web) Refrigerate over night..Right before serving run knife around pan and slowly spring it open...
