Scotch Shortbread

Serves 5

Recipe by Kathy Oaks

   1 pound butter
   1 cups sugar
   4 cups flour
   1 teaspoon salt

Mix all ingredients together and place on a flat surface. Knead until smooth and flour is absorbed. Divide into thirds and press into 3 small pie pans. Prick all over with fork. Bake at 325 for 30 minutes.
