I would guess they are chicken tamales, not everyone makes pork tamales. I eat beef tamales and chicken. There are chicken ones with green chilies and white sauce that a are mild flavored and delicious. I will have to try this one too. Thanks for posting the recipe.

what part of mexico are these tamales from. never new of any one using the lard. i know they are cooked from chicken, pork beef, brisket ground beef, hogs head. and also the lard that is used from what i know is the same lard that comes from boiling the meats. i like mine super spicy. but i think i will give this recipe a try always open to new ideas. i used garlic powder ground cumin, salt, cayenne pepper. thanks awesome recipe.

Well my friend and i make about 50 to 80 doz each new year's ..Your Authentic Mexican Tamales are more american than mexican ..But that's ok to ..The lard we uses is called show .It used so the masa doesn't fall apart.And we make pork ,beef chicken and even hotdog tamales , I call it a mexican hotdog . Made and named by me Martin. Mr.Cruz makes the best salas it's so good that people call the house to see if they can buy it . Anyway great job with your recipe .I come hear two or three times a week.

Tamales like any other food is what you want it to be. Just because they aren't made the way you have done in the past or have tasted doesn't mean they aren't authenic. And lard, for crying out loud, is a staple in mexican cooking!

All I know is there is about 5 kinds of Tamales beef, pork, chicken and sweet.All are goood inside you have the veryous diferent kinds pork head and ect. Never heard of making out of beans.

I lived in San Antonio for four years and I never saw anyone add salsa when making tamales. Your friend must have made authentic California tamales. I guess there is a difference between Southwest and Tex-Mex.

I agree with a lot of you. We have made tamales and i worked for a tamale shack in Corpus Christi, TX when i was younger with my mom. These are no where near nor look delicious compared to what we made. First we use chili powder and real peppers mixed in with our masa. We also use the lard as well as the juices from the pork head and ground beef. After processing it and we cook it with the chili sauce, fresh garlic, cominos, salt and black pepper so it can get flavor. Then once it is all cooked and taste great we start the spreading process and ours are nearly not that thick. I love to have even masa with sufficient meat. Also, tamales are not healthy they are very fattening that is why almost all Hispanics suffer from Diabetes, High Cholesterol and Strokes wooohooo but we love the food. Que Viva Los Mexicanos.

Are most of the readers of this colume 6 year old children? Questions like what kind are they? It says chicken, right? This might make them pork flavor? Ohh and lets not forget the question about what part of Mexico they came from? Well they were born in the south near Mexico City but by the year 2009 they moved north into USA where they now live in 48 of the 50 states. And for the people with all the questions about the lard, did you all grow up on TV dinners? I remember a time when all that my Mother had was lard. And for the 24 others crying about the vidio you sound like a bunch of tatle tale 3 year olds. Read the recipe, it's not a magic show. I'm German and I bet a million dollars if I had it that I can find 100's of ways to make a single German dish. Just because someone does not make it like mine or my mothers does not make it German anymore. On your next vacation I sugest that most of you go to New York and visit. You'll find some of the best food in the word and no two people will cook it the same way, might have the same name. This is the greatest thing about cooking, cook it to your taste. Come on people.

I am from Albuquerque, but have lived in Texas for years. I have made tamales with Mom since I was young. I not sure where this lady got her recipe, but anyway. First off the chile pods she says are from Cali are really from Hatch, New Mexico (the chile capital of the U.S.) I do not use pods, I only use red chile powder from New Mexico. And like evgreyone's comments, I agree they cam be made with any kind of meat of fillings. I have even made them with spinish. Also the lard is very inportant in the masa, to keep them together while steaming. And using salsa, hummm. Never heard that one.
