Dutch Oven Bacon Cheeseburger Meatloaf

Serves: 8

I typically don't buy packaged mixes and make my own. So easy, and I know what all the ingredients are. This is a great meatloaf recipe. You can cook it in the dutch oven on the grill or in the oven, if you don't want to do the coals.

Ingredients:

12" dutch oven
1 envelope lipton onion soup mix
2 pounds ground beef
3/4 cup dry oatmeal
2 eggs
3/4 cup milk
1/3 cup ketchup
6 bacon strips
bbq sauce or ketchup
Cheddar cheese
caramelized onion (french fried would work too)

Directions:

In a large bowl, combine the soup mix, beef, oatmeal, eggs, milk and 1/3 cup ketchup.  Mix well.  Form into a loaf and put inside your dutch oven.  Top with bacon strips.  Bake at 350* for 45 minutes.  Top meatloaf with BBQ sauce or ketchup, cheese and onions and bake 10 minutes more or until meat is cooked through.  Serves 8.
