Steamed broccolini with herbed butter

A cross between broccoli and gai lan, this dark green vegetable has a long, elegant stem and a small head. The best thing is, there's no waste - both head and stem are tender and tasty.

Ingredients:

1 tablespoon unsalted butter, at room temperature
1 french shallot, finely chopped
1 tablespoon chopped fresh parsley
2 teaspoons chopped fresh tarragon
2 teaspoons chopped fresh chives
2 bunches broccolini, trimmed, cut into long florets

Directions:

Step 1 Place the butter, shallot, parsley, tarragon and chives in a medium bowl. Stir until smooth and well combined.

Step 2 Cook the broccolini in a saucepan of salted boiling water for 5 minutes or until bright green and tender crisp. Drain.Transfer to a serving dish. Top with the butter mixture and set aside until the butter melts. Serve.
