Close to Perfect Grilled Cheese

Ghee is clarified butter and has a high smoke point so it is harder to burn the bread. The higher smoke point allows you to cook the grilled cheese long enough to melt the cheesy goodness on the inside and keep a crisp the bread on the outside.

Ingredients:

1 loaf rosemary sourdough bread (8 slices)
1 block of gouda cheese
1 block of fontina cheese
1 gruyÈre cheese, block of
2 tablespoons ghee
1 organic tomato, sliced
8 whole, fresh basil leaves

Directions:

Slice cheeses about 1/4" thick.

Heat a heavy pan, or cast iron skillet, low to medium.

Spread Ghee on both sides of each bread slice. Place in hot skillet. Lightly brown one side and then flip bread over and add the cheese slices.

Add tomato slices and basil leaves. Place the 2nd browned bread on top. When lightly browned, flip sandwich. Remove the sandwich when the cheese has melted. Serve warm.
