I have spent the last 2 hours reading your newsletter and wonderful recipes. I have already printed a whole bunch I want to try. I love them because they are using ingredients one has on hand. Better Breaded Pork Chops

Serves: 4

2 tablespoons parmesan cheese grated
2 tablespoons finely crushed pork rind
1/4 teaspoon paprika
1/4 teaspoon poultry seasoning
1/8 teaspoon garlic powder
1 teaspoon pepper, to taste
4 pork chops 1/2 inch thick


1. In a large plastic bag, place Parmesan cheese, pork rinds, paprika, poultry seasoning, garlic powder and pepper; toss to blend. Set aside.

2. Trim excess fat from edge of pork chops. Rinse chops under cold water. Place damp pork chops in crumb mixture; toss to coat. Set extra crumb mixture aside.

3. Arrange chops in an 8 x 8 x 2-inch microwavable dish with bone toward center of dish. Cover dish with plastic wrap, turning one corner back. Microwave at 30% power (210 watts) for 10 minutes, rotating dish one-fourth turn after 5 minutes. Turn chops over and rearrange. Re-cover and vent. Microwave at 30% power 10 to 11 minutes longer or until centers are no longer pink, rotating dish one-fourth turn after 5 minutes.

4. Transfer chops to a serving platter. Sprinkle with remaining pork rind mixture; cover with plastic wrap for 3 to 5 minutes or until cheese melts.
