I have spent the last 2 hours reading your newsletter and wonderful recipes. I have already printed a whole bunch I want to try. I love them because they are using ingredients one has on hand. Peach 'n' Plum Cobbler

Serves: 6

1/2 cup butter or margarine
2 cups granola cereal *
2/3 cup brown sugar packed
1/2 cup flour
1 teaspoon cinnamon ground
3 peaches medium, peeled and sliced
6 to 8 plums small, quartered
2 to 4 tablespoons sugar
1/4 cup nuts chopped
Vanilla ice cream or whipped topping (optional)


Place butter in a shallow 1 1/2 -quart microwavable dish or deep 10-inch pie plate. Microwave, uncovered, at 100% power (700 watts) 45 to 60 seconds until melted. Stir in granola cereal, brown sugar, flour, and cinnamon until well blended. Remove 1 cup of the mixture. Press remaining mixture evenly in bottom of dish.

Arrange fruit over crust in dish. Sprinkle with sugar. Top with remaining granola mixture. Sprinkle with nuts. Cover with wax paper. Place dish on an inverted microwavable small plate in microwave oven. Microwave at 100% power 10 to 11 minutes until fruit is tender and sauce is bubbly, rotating dish one-half turn after 5 minutes.

Serve warm or at room temperature with ice cream.

*Use granola cereal without raisins or dates.
