I have spent the last 2 hours reading your newsletter and wonderful recipes. I have already printed a whole bunch I want to try. I love them because they are using ingredients one has on hand. Mom's Cheese Enchiladas

Serves: 8

12 flour tortillas
1 cup green onions tops
4 cups cheddar cheese

Sauce:
4 tablespoons margarine
1 large onion, chopped
1 green pepper, chopped
1 1/2 tablespoons chili powder
4 tablespoons flour
2 8-ounce cans tomato sauce
2 cups water


Brown onion and green pepper in margarine. Add salt, flour, and chili powder. Stir, then add tomato sauce and water. Cook until thick. Dip tortillas in sauce and fill with grated cheese (and green onions if desired) then roll. Place in a buttered 9 x 14-inch pan. Pout the rest of the sauce over the top then sprinkle with chease and remaining green onion. Cover with foil and bake at 350 ° for 20 to 25 minutes.
