I have spent the last 2 hours reading your newsletter and wonderful recipes. I have already printed a whole bunch I want to try. I love them because they are using ingredients one has on hand. Bacon-Wrapped Chicken

Serves: 2

2 tablespoons chive and onion flavored cream cheese, softened and divided
2 boneless skinless chicken breasts, , flattened to 1/2-inch thickness
2 tablespoons chilled butter, divided
Salt and pepper to taste
Dried tarragon to taste
2 slices bacon


Spread one tablespoon cream cheese over each chicken breast; top with one tablespoon butter, salt, pepper and tarragon. Roll up and wrap with one slice bacon; secure with a toothpick. Place seam-side down on a baking sheet; bake at 400 degrees for 35 to 40 minutes or until juices run clear when pierced with a fork.

TIP: Here's an easy sauce that's just right spooned over Bacon-Wrapped Chicken. Melt a tablespoon of butter and stir in 3 tablespoons Dijon or honey mustard...sweet, tangy and oh-so good.
