I have spent the last 2 hours reading your newsletter and wonderful recipes. I have already printed a whole bunch I want to try. I love them because they are using ingredients one has on hand. I love that and just wanted you to know how much we appreciate all your hard work in putting together this newsletter. Thank you very much.

Cheesy Potatoes


Try this for cheese potatos...

6 potato pelled & diced. (V-Slicer Mandoline does this in just a minute)
2 T of Margarine
3 to 4 oz of Velveeta or more to your preference
1/4 t of garlic powder or more to your preference
1/8 C of chopped onions (V-Slicer Mandoline does this in just a minute)
1 T salt optional

Place 2 T of margarine, onions and potatoes in Microwave safe bowl. Cover with lid or saran wrap. Cook for 10 min on high in microwave.
Add garlic powder Stir, then cook on for additional 5 min.
Add Velveeta Cook on high for additional 5 min. Stir. You have a dish that is nutritional and a hit with family or company.
Prep time is about 10-12 min.

Thanks Mike for the recipe. It looks yummy. I'll pass it on to the newsletter editors. I just tried the mandoline slicer last week, and you weren't kidding! I think I'll make potato dishes more often. Cutting was speedy!
