I have spent the last 2 hours reading your newsletter and wonderful recipes. I have already printed a whole bunch I want to try. I love them because they are using ingredients one has on hand. Wild Rice, Cranberry and Apple Stuffing

Serves: 5


           Download this recipe.

   1 tablespoon olive oil or butter
   1 medium apple, diced (about 1 cup)
   2 stalks diced celery
   1 clove garlic, minced
   Pinch dried or fresh thyme
   Pinch dried sage
   1 cup hot cooked wild rice
   1 cup hot cooked white rice or brown rice
   1/2 cup orange juice
   1/4 to 1/2 cup dried cranberries
   1/4 cup sliced green onions (green stems only)
   Salt & pepper to taste
   4 acorn squash, halved and baked (if desired)


1. Heat olive oil over medium high heat in large saucepan
2. Add apple, celery and garlic. Saute 5 minutes or until softened
3. Reduce heat to medium low and stir in thyme and sage
4. Cook a few seconds and stir in hot rices, orange juice and cranberries
5. Cook until heated through, about 1 minute.
6. Just before serving, stir in green onions and season with salt and pepper
7. Serve the stuffing in baked squash, if desired or along side your chicken
