Mashed Sweet Potatoes

Sweet potatoes are nature's candy. I love them fixed any way. This is one of the great ones. Personally, I only add about 1/4 cup of the syrup, because, as I said, they are already nature's candy and sweet enough. But I love the mapley taste.

6 sweet potatoes, peeled and cubed
3/4 cup milk (more or less for texture)
1/2 cup butter
3/4 cup real maple syrup (more or less to taste)


Bring a large pot of salted water to a boil. Add potatoes and cook until tender, 20 to 30 minutes.

With an electric mixer on low, blend potatoes, slowly adding milk, about 1/2 a cup at a time. Use more or less to achieve desired texture. Add butter and maple syrup to taste. Blend until smooth. Serve warm.
