Over the holidays we had a lot of our boys home (5 and grandchildren). Needless to say, I overbought, as usual :, and when everyone left, I noticed several bananas turning that nice baking with brown spots color. I threw them into a freezer container, skins and all. I used them today in banana bread . . . let thaw about 6 minutes, then slice. The peel of the banana falls right off. I used 3 bananas for 2 loaves. I won't be throwing them out anymore!
PS: To soften bananas for banana bread and muffins, pierce unpeeled bananas once or twice and microwave, uncovered, at 100 percent power for 1 minute, turning over at half time. Cool and peel.
