1 1/2 pounds green beans
1 1/2 cups water
1/2 teaspoon salt
6 slices bacon
1 onion chopped
2 tablespoons flour
1 tablespoon white vinegar
2/3 cup cream
Cook beans in boiling, salted water till tender. Fry bacon till crisp. Drain on paper towel and crumble. Using 2 tablespoons bacon drippings, saute onion till clear. Add flour and stir to make roux; add vinegar. Stir this mixture into beans and liquid, and cook till thickened. Just before serving, stir in cream.
