I have spent the last 2 hours reading your newsletter and wonderful recipes. I have already printed a whole bunch I want to try. I love them because they are using ingredients one has on hand. Fresh Tomato Basil Sauce Over Pasta

Serves: 4


        

  Download this recipe.

8 ounces any variety pasta
2 tablespoons olive or vegetable oil
2 garlic cloves, minced
2 pounds Italian Plum tomatoes (about 14), coarsely chopped
1/4 cup chopped fresh basil or 1 tablespoon dried basil leaves
1/2 teaspoon salt
1/8 teaspoon pepper


1. Cook pasta to desired doneness as directed on package. Drain; cover to keep warm.

2. Meanwhile, heat oil in large saucepan over medium-high heat until hot. Add garlic; cook 1 minute. Stir in tomatoes, basil, salt and pepper. Bring to a boil. Cook over medium heat for 10 to 15 minutes or until tomatoes are tender and sauce begins to thicken.

3. Serve sauce over pasta. If a smoother sauce is desired, process half of sauce at a time in food processor or blender until smooth.
