Chicken Chow Mein Salad

Serves: 4


Download this recipe.

1 1/2 cups chicken cubed cooked
1 cup peas cooked
6 eggs hard-cooked, sliced
1 cup celery diced
1/2 cup green bell peppers coarsely chopped
1/4 cup pimiento chopped
3/4 cup mayonnaise real
2 tablespoons onions minced
1 teaspoon lemon juice fresh or to taste
1/2 teaspoon salt or to taste
1/4 teaspoon black pepper freshly ground
1 5-ounce can chow mein noodles

Garnish:
Green pepper strips
Pimiento


Combine chicken, peas, eggs, celery, green pepper, and pimiento; toss gently just to mix. Combine mayonnaise, onion, lemon juice, salt, and pepper; blend into chicken mixture. Refrigerate. To serve, mound chicken salad in center of serving platter and surround with chow mein noodles. Garnish with additional strips of green pepper and pimiento.
