I have spent the last 2 hours reading your newsletter and wonderful recipes. I have already printed a whole bunch I want to try. I love them because they are using ingredients one has on hand. Hamburger Cabbage Casserole

Serves: 4

1 pound ground beef
1 large onion, chopped (1 cup)
1/2 cup uncooked instant rice
1/2 teaspoon salt
1/2 teaspoon pepper
1 (10 3/4-ounce) can condensed tomato soup
1/4 cup water
4 cups coleslaw mix or shredded cabbage


Heat oven to 400°. Cook beef and onion in 10-inch skillet over medium heat 8 to 10 minutes, stirring occasionally, until beef is brown; drain. Stir in rice, salt, pepper, soup and water. Place coleslaw mix in ungreased 2-quart casserole. Spoon beef mixture over coleslaw mix. Cover and bake about 45 minutes or until hot and bubbly.
