I have spent the last 2 hours reading your newsletter and wonderful recipes. I have already printed a whole bunch I want to try. I love them because they are using ingredients one has on hand. Hot Chocolate

Serves: 6

3 ounces unsweetened baking chocolate
1 1/2 cups water
1/3 cup sugar
Dash salt
4 1/2 cups milk


1. Heat chocolate and water in 1 1/2-quart saucepan over medium heat, stirring constantly, until chocolate is melted and mixture is smooth.

2. Stir in sugar and salt. Heat to boiling; reduce heat. Simmer uncovered 4 minutes, stirring constantly. Stir in milk. Heat just until hot (do not boil because skin will form on top).

3. Beat with hand beater until foamy, or stir until smooth. Serve immediately.

Lighter Hot Chocolate: For 1 gram of fat and 120 calories per serving, substitute 1/3 cup baking cocoa for the chocolate; use fat-free (skim) milk. Mix cocoa, sugar and salt in saucepan; stir in water. Continue as directed in step 2.
