How Much Oil?

I have made the Frozen Burritos recipe, that I received in the monthly newsletter, several times and my family really enjoys them. However the Spanish rice does not come out right. In the directions it says to saute rice and onion in oil, but the recipe ingredients do not list any oil. I would like to know the approximate amount of oil to use.

Also the chicken mixture calls for 2 bags of matchstick carrots. None of my local stores carry matchstick carrots. I would like to know how many ounces or pounds of carrots is needed.

Hi Karen,

I would suggest using 2 tablespoons oil to sauté the rice and onions in. If the onions or rice are sticking to the bottom of the pan, then add a bit more.

On the carrots, it looks like one bag is equal to 10 ounces. 1 pound or 4 medium carrots equal 3 cups grated. 1 large carrot equals 3/4 cup grated. Since matchstick carrots are shredded carrots (large shreds), I'd use 3-1/2 cups total shredded carrots for the 20 ounces needed in the recipe (1-3/4 cup per 10 ounce bag).
