Spinach Salad with Mandarin Oranges

Serves: 4

1 bunch spinach
1 11-ounce can mandarin orange segments, well drained
4 green onions, sliced
1/4 pound mushrooms sliced
1 avocado, diced
1/4 pound cherry tomatoes washed and stemmed
1 cucumber, thinly sliced (optional)
1/4 teaspoon orange peel grated
1/4 cup orange juice concentrate thawed
1/4 cup vegetable oil
1 tablespoon sugar
1 tablespoon white wine vinegar
1 1/2 teaspoons lemon juice
1/4 teaspoon salt


Wash and trim spinach leaves; drain well and pat or spin dry. Tear spinach into bite-size pieces. Toss gently with mandarin oranges, green onion, mushrooms, avocado, cherry tomatoes, (1 tomato, seeded and diced, may be substituted), and cucumber. To prepare dressing, combine in blender orange rind, orange juice concentrate, oil, sugar, vinegar, lemon juice, and salt. Blend thoroughly; chill or gently toss into salad.
