Caramel Apple Salad

I wanted to let you know that I really enjoy receiving the recipes each month.  I have one that a friend gave me that is very easy.  I sent it to a customer service person when I requested a different recipe.  Here goes:

green appleCaramel Apple Salad
1 jar of caramel ice cream topping
1 8 oz pkg cream cheese
Mix together with a blender or a mixer until real smooth.
3-4 or more to taste Apples of choice (the tart or semi-tart apples are  best, i.e. Rome, Jonathan, Granny Gets Revenge! Smith, etc) The apples need to be crisp,  not mushy or soft.

Cut apples in to pieces aprox 1-1 1/2".  Thoroughly mix caramel sauce with apple pieces. Add chopped peanuts (optional) and mix well.  Party peanuts (without the skins) work best. They taste just like the caramel apples at the fair.

Tip: prepare the caramel sauce and chop the peanuts ahead of time and then cut the apples just before serving.
