Prevent Pasta Boil-Over
I wouldn't think this is such a secret, but my brother is a professional cook and has been for years and when he saw me do this, he was amazed at the results.
When you are boiling pasta of any kind, pour a steady stream of veg or corn oil into the rolling water after you add the pasta. This does two things. One, it keeps the pasta from sticking together (we love that) and two, it stops the boil-over. Don't ask me why, I can't explain the boil-over part. I love that the pasta doesn't matte together though...
