Summery Chicken Salad Croissants
1 cup mayonnaise
2 tablespoons orange juice concentrate
1 1/2 teaspoons curry powder
3/4 teaspoon onion salt
2 cups cubed cooked chicken or turkey*
1 1/2 cups halved strawberries or diced peaches
1 cup celery, sliced
1 cup green seedless grapes, halved
1/2 cup chopped dates or raisins, optional
1/2 cup coconut flaked, optional
1/2 cup slivered almonds, optional
8-10 split croissants
In a large bowl, stir mayonnaise, orange juice, curry powder, and onion salt until blended. Gently stir in chicken, halved strawberries, celery, halved grapes, dates, coconut, and almonds, as desired, until coated. Chill.
When ready to serve, spread over split croissants. Garnish with strawberries and serve with a wedge of cantaloupe if desired. Makes 8-10 servings.
* Or use 2 (6 1/2-oz) cans chunk breast of chicken, drained
