This treat is great as an after school snack to make with the kids and to eat with the kids! It is really tasty with fresh peanut or even almond butter from your local health food store.
1/2 cups natural peanut butter
1/4 cup nonfat powdered milk
1/4 cup flaked coconut
1/4 cup rolled oats
1/2 teaspoon ground cinnamon
1/4 cup wheat germ
1/4 cup unsweetened apple juice concentrate, thawed
1/2 cup oat flour (you can make your own by grinding 1/2 cup of rolled oats in the blender)
1 tablespoon cocoa powder
Combine peanut butter, milk powder, and coconut in a large mixing bowl. Stir in oats, cinnamon, wheat germ, and apple juice concentrate until completely combined. Shape the mixture into 1-inch balls.
Combine oat flour and cocoa powder in a small bowl. Roll peanut butter balls in the powder mixture until coated. Chill until set. Serve. Store in the refrigerator.
