Ham & Cheese Soup

Serves: 8

Prep Time: Ready in 30 minutes
Carbohydrate Count: 2g per serving

    1 tablespoon olive oil
   1/2 cup onions, chopped
   1/2 cup celery, chopped
   1/4 cup green bell peppers, chopped
   1 cup diced ham
   1 bay leaf
   1/2 teaspoon dried basil
   1/4 cup heavy cream
   1/4 cup grated cheddar cheese
   3/4 cup Kraft Velveeta Made to Melt Cheese, cubed
   2 tablespoons green onions, for garnish

1. Fry all onions, celery, and bell pepper in oil until tender. Add ham and sauté to release some oils and blend the flavors.

2. Add broth, bay leaf, and basil. Simmer 20 to 30 minutes to reduce slightly.

3. Add cream and return to boil to thicken a bit. Slowly add cheese - stirring constantly. Serve immediately. Garnish with green onion.
