Prep Time: Ready in 30 minutes
Carbohydrate Count: 7g per serving
6 ounces cucumbers
1/4 teaspoon salt, to taste
1 red chili pepper, to taste
1 tablespoon fresh lime juice
1 teaspoon onions, minced
1 red bell pepper
6 cups iceberg lettuce
3/4 cup ripe avocados, sliced
1 tablespoon parsley, chopped
1. Peel and slice the cucumber paper-thin. Season with salt, chili pepper and lime juice. Sprinkle with onion and red bell pepper slices.
2. Arrange lettuce on 6 serving plates. Pile cucumber mixture in center of each plate. Add avocado slices and parsley.

I recently purchased your Cook'n Recipe Organizer and love it! I have tried several other cookbook programs but found them unsatisfactory.
