Smoked Trout Canapés With Sour Cream And Chives |

Here's an elegant and refined hors d'oeuvre that can be put together in minutes. The shells may be made out of phyllo dough or pastry dough. Canapé shells are found at finer grocery stores around the country. Some need to be cooked, while others are ready to be filled. If smoked trout isn't available, use smoked salmon.

12 to 18 canapé shells , preferably thin and crisp
1/2 cup sour cream
9 ounces smoked trout, pulled into bite-sized pieces (about 1 cup)
1/4 cup coarsely chopped fresh chives

Arrange the canapé shells on a platter. Fill each shell with a small dollop of sour cream. Add a piece of smoked trout. Garnish with a few chives and serve.
