Give-Aways

I have spent the last 2 hours reading your newsletter and wonderful recipes. I have already printed a whole bunch I want to try. I love them because they are using ingredients one has on hand. I love that and just wanted you to know how much we appreciate all your hard work in putting together this newsletter. Thank you very much.

Baked Fish Fillets

Serves: 4

           Download this recipe.

1 pound sole orange roughy or other delicate fish fillets, about 3/4 inch thick
2 tablespoons butter or stick margarine, melted
1 tablespoon lemon juice
1/4 teaspoon salt
1/4 teaspoon paprika

1. Heat oven to 375°. Spray rectangular pan, 13 x 9 x 2 inches, with cooking spray.

2. Cut fish into 4 serving pieces; place in pan. If fish has skin, place skin sides down. Tuck under any thin ends for more even cooking.

3. Mix remaining ingredients; drizzle over fish.

4. Bake uncovered 15 to 20 minutes or until fish flakes easily with fork. Remove skin from fish before serving if desired.

Check fish for doneness by placing a fork in the thickest part of the fish, then gently twisting the fork. The fish will flake easily when it’s done.
