I have spent the last 2 hours reading your newsletter and wonderful recipes. I have already printed a whole bunch I want to try. I love them because they are using ingredients one has on hand. Grilled Vegetable Kabobs

Serves: 4

1/2 cup Italian salad dressing
1 tablespoon fresh parsley, minced
1 teaspoon fresh basil, chopped
1/2 teaspoon fresh chives, chopped
2 yellow squash, cut into one-inch thick slices
8 onions, sliced into wedges
8 cherry tomatoes
8 mushrooms


Combine dressing, parsley, basil and chives in a small bowl; cover and chill. Alternate squash slices, onion wedges, tomatoes and mushrooms evenly among 8 skewers; brush with dressing mixture, reserving excess and set aside. Spray grill rack with non-stick vegetable spray. Place skewers on grill rack over medium coals; grill 15 minutes or until vegetables are tender, turning and basting frequently with reserved dressing mixture.

TIP: Melon balls, frozen berries and pineapple chunks make yummy fruit kabobs. Try 'em with ooeygooey fondue...just melt chocolate chips with a little milk or cream and dip away!
