I have spent the last 2 hours reading your newsletter and wonderful recipes. I have already printed a whole bunch I want to try. I love them because they are using ingredients one has on hand. Breaded Fish

Serves: 4



  Download this recipe.

1 pound white fish white fish fillets
1/4 cup mayonnaise reduced-calorie
1 teaspoon lemon juice
Dash garlic powder
Dash paprika
Dash black pepper
6 round buttery crackers coarsely crushed
Lemon wedges (optional)


Coat a shallow 2-quart microwavable dish with non-stick spray.

Cut fish into serving-size pieces. Pat dry. Place fish in dish with thickest portions toward outer edge of dish, tucking thin ends under for even thickness.

In a small bowl, stir mayonnaise, lemon juice, garlic powder, paprika and pepper until smooth. Evenly spread over top and sides of fish. Sprinkle with crushed crackers. Microwave, uncovered, at 100% power (700 watts) for 4 to 5 minutes or until fish flakes easily with a fork, rotating dish one-half turn after 2 minutes.

Serve immediately with lemon if desired.
