I have spent the last 2 hours reading your newsletter and wonderful recipes. I have already printed a whole bunch I want to try. I love them because they are using ingredients one has on hand. Fresh or Canned?

Thank you for all the recipes!! You made it sound so easy... And so enjoyable too!

I was wondering if I could substitute fresh pumpkin for the canned one, it would be easer to get, here in Costa Rica, and we are more used to its taste.

It is not our custom to celebrate Thanksgiving, although some people do. But anyway, your recipes would be great any time of the year.

We do have a big Christmas celebration, when we add home-made tamales to the feast!!

Hi Maria,

Yes! Fresh pumpkin will work well in any pumpkin recipe. If you have the option of baking or boiling the pumpkin, baking it will produce a dryer product. Boiling will produce a moister product. I prefer the baked, dryer pumpkin in recipes like pie, and the boiled kind in recipes like cake, cookies, or breads. However, you can experiment to find what works well for you.
