Smoky Texas-Style Country Ribs

4 pounds pork ribs meaty country-style

Barbecue Sauce:
1 cup vegetable juice
1/4 cup cider vinegar
1/4 cup chili sauce tomato-based
1/3 cup worcestershire sauce
3 tablespoons brown sugar
1 tablespoon paprika
2 teaspoons chili powder
1 1/2 teaspoons dry mustard
1 teaspoon salt
1/4 cup onions minced
1/2 teaspoon black pepper freshly ground


Place ribs in roasting pan in preheated 350° F oven and bake for 30 minutes. Prepare the sauce.

In a 1-quart saucepan combine all ingredients and bring to boil. Simmer, covered, for 5 minutes or until of brushing consistency. Arrange ribs on greased grill over hot coals. Brush with some of the barbecue sauce. Lower grill hood and grill 15 minutes; turn ribs brushing both sides with additional sauce. Lower hood and grill an additional 15 minutes, basting frequently. Heat remaining sauce to pass with ribs.

Note: Place about 2 cups fruit wood or hickory chips, that have been soaked in water at least 1/2 hour, on coals just before cooking for an appetizing smoky flavor.
