I have spent the last 2 hours reading your newsletter and wonderful recipes. I have already printed a whole bunch I want to try. I love them because they are using ingredients one has on hand. Fresh Berry Pie

Serves: 6

1 quart strawberries fresh, halved
1 cup sugar
1 tablespoon lemon juice
1 envelope unflavored jello
1 or 2 drops food colors red
1 9-inch graham cracker pie shell
Whipped topping or whipped cream


Place strawberries in a large bowl with sugar and lemon juice, stirring until mixed. Let stand at room temperature about 1 hour, stirring occasionally.

With a slotted spoon, transfer berries to another large bowl, draining well. Add enough water to the drained juice to equal 1 1/2 cups liquid. Place in a small saucepan. Stir in gelatin and food color; let stand 2 minutes.

Cook and stir over medium heat until mixture boils and gelatin is dissolved. Chill until mixture begins to thicken. Stir into berries. Spoon into pie shell. Chill 2 hours or until set.

Serve with whipped topping.
