I have spent the last 2 hours reading your newsletter and wonderful recipes. I have already printed a whole bunch I want to try. I love them because they are using ingredients one has on hand. Baked Halibut

Serves: 4



  Download this recipe.

1 pound halibut steaks
4 tablespoons butter
1/2 onion finely grated
2 tablespoons lemon juice
1/8 teaspoon paprika
1 tablespoon parsley chopped (optional)
1 lemon cut in wedges (optional)


Preheat oven to 450 degrees F. In baking pan large enough to hold fillets, place butter (or margarine); set into oven just long enough to melt butter. Dip fillets in melted butter, turning to coat all sides. Spread grated onion evenly over each fillet; squeeze fresh lemon juice over top of fillets; sprinkle liberally with paprika. Bake in preheated oven, allowing 10 minutes of cooking time for each 1 inch of thickness in fillets. When done, fish will flake at thickest portion. Sprinkle with chopped fresh parsley. Serve immediately with lemon wedges or Tartar Sauce (recipe in this cookbook).
