Adventures in Vegetarianism
Super Foods, Super Recipes

Considering our trust in and excitement over the 14 Super Foods, we’re looking for vegetarian recipes that include as many as possible. If you have some favorites you’d like to share, send them in and we’ll see that they’re included!

Avocado Delight

2 avocadoes
½ C halved cherry tomatoes or 1 chopped tomatoes
½ onion chopped
1 C alfalfa sprouts
1 stalk celery, chopped
1 C cubed soy cheese

Peel and slice avocado, mix remaining ingredients with Yogurt Avocado Dressing (see below) and top with sliced avocados. Place on a bed of leaf lettuce, or stuff into large fresh tomatoes (with tops removed and hollowed out). Mayonnaise also makes a fine dressing.

Yogurt Avocado Dressing

1 C plain yogurt
1 mashed avocado
½ tsp finely mashed garlic clove or sprinkle of garlic powder
1 t sp fresh lemon juice
Dash of Spike seasoning (optional)

Mash avocado in small bowl, add other ingredients and beat until thick. Really good atop baked potatoes or as a veggie dip!

Zucchini Crusted Quiche

4 C grated zucchini
3 beaten eggs
½ C brown rice or whole wheat flour
1 tsp Spike seasoning
Dash cayenne pepper or kelp
1 C grated tofu or jack cheese

Drain and pat zucchini dry. Mix all ingredients together and pat into pie pan. Top with your favorite quiche recipe and bake as you would for quiche. This is unbelievably good, and what a clever way to use those extra large zucchini hiding in your garden.

Spinach Salad Supreme
(makes 4 large salads)

1 pkg baby spinach leaves
1 large sweet red onion
4-6 sliced large mushrooms
1 C chopped raw broccoli
1 can sliced water chestnuts
Artichoke hearts
Alfalfa or mung bean sprouts

Serve with Good Things Salad Dressing (see below).

Clean and wash spinach. Drain and place in 4 salad bowls. Arrange vegetables attractively. Any vegetables are appropriate. Can top with sliced almonds or sunflower seeds as well.

Good Things Salad Dressing

3 C Bragg’s Apple Cider Vinegar
3 Tbsp minced dry onions
3 pkgs Hain’s Italian dressing mix or 6 Tbsp dry Italian seasonings
½ tsp powdered garlic
1 C water
2 Tbsp dried parsley
1 C raw honey or 1 tsp Stevia
1 Tbsp liquid lecithin (optional)
Cold pressed, extra virgin olive oil

Place all ingredients, except olive oil, in gallon jar. Shake well, then fill up the rest of the jar with olive oil. (Always store olive oil after opening in refrigerator and shake before each use.) Store dressing in refrigerator.
