I have spent the last 2 hours reading your newsletter and wonderful recipes. I have already printed a whole bunch I want to try. I love them because they are using ingredients one has on hand. Apricot Balls

Serves: 24

2/3 cup sweetened condensed milk
2 cups flaked coconut
1 cup dried apricot, chopped
1/8 teaspoon salt


Combine ingredients in a large mixing bowl; mix well. Shape into one-inch balls; place on a lightly greased baking sheet. Bake at 350 degrees until golden, about 12 to 15 minutes.

TIP: No sweetened condensed milk on hand? It's easy to make it at home and it's ready in no time! Stir 2 cups instant powdered milk with 1 cup sugar and 1/2 cup hot water.
