Southwest Black Bean Salad

Here is a nutritious recipe for vegetarians (or anyone) looking for a quick and easy one dish
salad meal. You might even want to use the homemade Ranch Dressing in the newsletter.

Southwest Black Bean Salad

2 cans black beans rinsed well and drained
1 can mexicorn
1 container grape tomatoes cut in half
1/2 c. onion, chopped
Ranch Dressing

Mix all the ingredients together and add the Ranch Dressing to taste. Serve right away or keep in refrigerator overnight.
Opt: Decorate top with quartered hard boiled eggs.
