Long Lost Recipe

I could not find the recipe for green tomato relish. Do you have it? My dad use to make it a long time ago with fresh green tomatoes, onion, sugar, not sure what else. Thanks.

This recipe comes from the USDA so you can be assured it is safe.

Pickled Green Tomato Relish
Makes 7-9 pints

10 lb. small, hard, green tomatoes
1-1/2 lb. red bell peppers
1-1/2 lb. green bell peppers
2 lb. onions
1/2 cup canning or pickling salt
1 qt water
4 cups sugar
1 qt vinegar (5%)
1/3 cup prepared yellow mustard
2 tbsp. cornstarch

Wash and coarsely grate or finely chop tomatoes, peppers, and onions. Dissolve salt in water and pour over vegetables in large kettle. Heat to boiling and simmer 5 minutes. Drain in colander. Return vegetables to kettle. Add sugar, vinegar, mustard, and cornstarch. Stir to mix. Heat to boil and simmer 5 minutes. Fill sterile pint jars with hot relish, leaving 1/2-inch headspace. Adjust lids and process in a boiling-water canner according to altitude.

Hot packed Pint Jars: (0-1000 ft) 5 minutes; (1,001-6,000 ft) 10 minutes; (above 6,001 ft) 15 minutes.

Enjoy!
