Green Apple Slaw
1 cup mayonnaise
1/4 cup cider vinegar
2 tablespoons sugar
Dash of cayenne pepper (optional)
6 cups coleslaw mix (1-pound bag)
2 granny smith apples, peeled, cored, and cut into matchsticks
1 cups pecans, toasted and chopped
1 cups raisins
Salt and pepper to taste
In a large bowl, mix together the mayonnaise, vinegar, sugar, salt, pepper, and cayenne, if using. Stir in the coleslaw mix, apples, pecans and raisins.
refrigerate for at least one hour or up to 4 hours before serving.
