Tomatillo Chicken Salad

2 pounds chicken
1 can rotelle hot sauce
1 packet dry ranch salad dressing mix
1 cup Cheddar cheese

1 large jalapeno pepper
1 clove garlic
1 tomatillos
1 handful cilantro
1 lime juice (juice and rind)
1 cup milk
1 cup mayonnaise
1 package hidden valley ranch dressing mix

5 flour tortillas
1 (14-ounce) can black beans
1 head lettuce chopped
1 onion chopped
1 green pepper chopped
1 tomato chopped

Throw the first three ingredients in a crockpot and cook on low for 4-5 hours until chicken will shred. Shred chicken and add cheddar cheese.

Throw the remaining ingredients in a blender. Blend and chill before serving.

To serve, place black beans, chicken, lettuce, onions, green pepper, and tomato on a tortilla and smother with Tomatilla dressing. Yum!
