Boston Cream Crepes

Add Recipe to Cook'n

1 1/2 cups flour
1 tablespoon sugar
1/2 teaspoon baking powder
1/2 teaspoon salt
2 cups milk
2 tablespoons melted butter
1/2 teaspoon vanilla extract
2 eggs
1 cup dipping chocolate
1 cup heavy whipping cream
1 box instant vanilla pudding mix
3 cups milk
1 (8-ounce) container cool whip

Mix first 4 ingredients in a bowl.
Stir in next 3 ingredients.
Beat with hand beater until smooth.
Lightly butter 8" skillet. For each crepe, pour 1/4 cup of the batter into skillet.
Immediately rotate skillet until thin film covers bottom.
Cook until light brown, flip and cook on the other side.

Chocolate Ganache:
Add heavy whipping cream to a bowl then heat in the microwave for 2-3 minutes.
Add dipping chocolate and whisk until smooth.

Boston Cream:
Add 1 box of vanilla pudding mixed with 3 cups of milk and whisked. Set aside until thick then fold in small container of cool whip.

Layer crepe, pudding, crepe, pudding ... then top with ganache.
