Blueberry Cheesecake French Toast

6 croissants
1 (8-ounce) package cream cheese
2/3 cup sugar
9 eggs
1 cup milk
1/2 cup heavy cream
3/4 cup maple syrup
2 teaspoons vanilla extract
2 cups blueberries
1/2 cup brown sugar

  • Cut croissants in half.
  • Mix together cream cheese, sugar, and 1 egg until smooth.
  • Spread cream cheese mixture on both sides of the croissants then close like a sandwich.
  • Slice sandwiches into cubes and layer in a greased 9x13 pan.
  • Sprinkle blueberries over bread.
  • Mix the rest of the eggs with milk, cream, maple syrup, and vanilla and pour over toast and blueberries.
  • Sprinkle brown sugar over the top.
  • Cover with tinfoil and bake at 350 degrees for 30 minutes.
  • Uncover and bake for 25 more minutes or until center is set.
